Watermelon Prawn Cheese salad

Gloriously fresh and aromatic prawn salad with watermelon and cheese

I have been watching a cookery competition and simply re-invented a very contrasting yet pleasant flavour combination. It is perfect for this warm summer (finally it is here!) as it is a fresh, juicy and filling at the same time salad.

You would need to buy a watermelon, pack of prawns, cheese to grill (you can do fine with haloumi, but I opted in for a more unusual Greek Saganaki cheese, which is designed to be served warm!) and small bits and pieces of herbs (I have used mint for freshness).

There is nothing really to discuss here as you simply need to slice watermelon, quickly fry your prawns (I did that very quickly with some garlic and butter for a more indulgent treat), warm up your cheese, dress with herbs, olive oil and season to your taste. I almost forgot that I’ve added just a few padron peppers that I love so much – you will have another flavour dimension – some spiciness to this dish now. For a bit of crunch you can opt in for a teaspoon of crunchy fried onions, but it will overcomplicate things slightly!

It is free from all badness including sulphites, preservatives and also vegan friendly. Full of flavour with some honey and herbs – will be a delicious partner for your fresh salads!
